Put Bacon on it!

Shortly after getting married I remember discussions with my Hubby about our soon to be children.

We talked at length about those kids we saw in restaurants that only ate chicken nuggets.

Our kids would not grow up like that.

We envisioned our children eating everything we placed on the table.

Gulping down chicken cordon bleu, spaghetti carbonara and a multitude of veggies.

Why not?

It’s not like I was going to put liver and onions or brussel sprouts out every day.

Of course not!

What I didn’t take into consideration is that kids are picky eaters.

Yep, even mine.

We didn’t cook separate foods for them.

Instead we directed our culinary efforts into foods they did like.

They loved pizza, but wouldn’t touch Mexican.

Why?

Picky, remember?

So I had to outwit them.

I love Mexican.

We started by making pizza on tortillas.

Then we put one on top of the other and grilled them, quesadilla?

We ate those pizza’s rolled up, fajita?

We slipped chicken into those pizza’s.

Finally rolled them up and sprinkled cheese on top and baked them, burritos!!

Fish however was a brick wall.

They wouldn’t touch it baked, fried or even smothered in pizza sauce.

So we resorted to a tactic that works every time.

WE WRAPPED IT IN BACON.

It could be regular bacon, ham or prosciutto.

Even kids love bacon.

They ate lentil soup if we sprinkled crispy bacon on top.

Pasta carbonara with cubed up prosciutto, yep they did.

Now that our children are older we don’t have to worry about what they will and not eat.

They really do eat everything we put on the table.

But we still like to wrap food in bacon.

 

Prosciutto Wrapped Shrimp

5 large shrimp per person

BBQ sauce

zest of 1 lemon

Thin sliced prosciutto, 1 per shrimp

Peel and clean shrimp

Mix BBQ sauce with lemon zest

Drag shrimp through sauce

Lay prosciutto flat on work surface

Drop shrimp on top and roll up

You can skewer shrimp if you prefer

Or place directly on grill

Grill 3-4 minutes per side, or until shrimp is nice pink color and

proscuitto is crispy
