Quinoa, have you tried it yet?

I invited a girlfriend over for lunch yesterday, she had never had it, or even heard of it before.

It’s a nice change from rice, lighter than pasta and makes a great salad.

And that’s exactly what I did.

We had a bunch of leftover grilled vegetables from the Cumin Rubbed Steak here a few days ago.

Not only is it very yummy, quinoa is really good for you.

It provides essential amino acids in a balanced pattern, so it is a complete protein grain.

Also it has more protein then any other grain.

And it’s gluten free! So you will probably see more recipes with quinoa from me soon…….

Quinoa Salad with Grilled Vegetalbes
1 zucchini
1 summer squash
2 portobello mushrooms
1/2 red and yellow pepper
10 stalks of asparagus
1/2 red onion
4 Tbs olive oil, divided
1/2 tsp of cumin, chili powder, oregano and kosher salt
1/4 tsp cayenne pepper
1/4 cup finely chopped cilantro
Salt & pepper to taste
4 ounces goat cheese
1 cup quinoa, cooked according to package directions
Cut into small pieces if using grill basket, or larger if placing directly on grill
Toss vegetables in olive oil, then sprinkle with spice mixture
Grill until nicely browned and cooked to your liking

Meanwhile, prepare quinoa according to package directions
Remove from heat, fluff with fork
Add 2 Tbs of olive oil and toss add vegetables, goat cheese and cilantro
