Paleo Diet, have you heard about it yet?  Some refer to it as the “Caveman Diet”.

A gal in my Husbands office is following it, she was explaining all about it a get together last month.

What I found interesting were the similarities to eating gluten free.

Both need to have most food choices from the source.  Not processed or manufactured.

So, a lot a fresh vegetables, fruits, poultry and meats, seafood, nuts and seeds.

We Celiacs add legumes, rice, potatoes, and gluten free pasta.  Paleo’s don’t.

Wow, I can’t imagine life without rice, potatoes or pasta!

I wonder if they can eat Quinoa, it’s a seed, not a grain……

Here is a pizza that falls in that Paleo/Gluten free zone, the crust is made from cauliflower!!

Cavemen ate cauliflower?

While it did taste extremely yummy, really ,I am not making that up, it did not taste exactly like regular pizza crust (we Celiac’s are used to things being different).

So if you are doing the whole low-carb, Paleo or Gluten free thing, or just feeling adventurous, this is your baby.

Cauliflower Pizza

Ingredients

  • 1 head cauliflower, "riced" equals about 2-3 cups when cooked
  • 1 cup grated mozzarella cheese, divided
  • 1/2 cup shredded parmesan cheese
  • 1/2 tsp basil, oregano, garlic powder
  • salt and pepper
  • 1 egg
  • Pizza sauce
  • 1/2 cup shredded mozzarella cheese
  • 1 tomato sliced
  • basil leaves

Instructions

Cut cauliflower in small florets, discarding leaves and hard stems

Add to food processor and pulse until it resembles rice, do not overprocess

Or use box grater to achieve the same consistancy

Put in microwave and heat for 5-7 mins, do not add any water

Or bring a large pot with 1" of water to boil, add cauliflower and cook 4-5 mins

Drain well, let cool a few minutes

Place in the center of a clean kitchen towel, roll up then twist to release excess water

You should remove about 1/2 cup or more, replace with second towel and repeat if needed.

Place in bowl and add all the spices and stir

Now add cheeses and egg, stir well

Spray sheet pan with olive oil and add mixture

Shape with back of spoon or your hands to form a circle or square

Bake in 450 degree oven for 25-30 mins,until nicely browned

Remove from oven and add pizza sauce, cheese and toppings of your choice

Broil for 2-4 mins, until cheese is melted and nicely browned on top

Enjoy.

I was the lucky girl who was invited by chef Pamela after the cauliflower pizza came out of the oven. I have no dietary restrictions, but, I looked forward to this pizza adventure. Well, it was delicious and it tasted so much like pizza. The “crust” was just out this world!
