Yesterday, I had a bit of time to myself to catch up on a few food blogs that I follow. I read them sometimes for inspiration, other times for validation. This time was just purely recreational.

Hot cup of tea at the ready, I settled down at my computer. Drooling over all the beautiful photos. At times wanting to grab a fork and knife and jump right in. Good thing I happened upon this post from Smitten Kitchen,  before the whole day was shot.

Coconut Lime Loaf

 

 

Coconut Bread Loaf with Buttermilk and Browned Butter

Cook Time: 1 hour

Coconut Bread Loaf with Buttermilk and Browned Butter

Ingredients

  • 2 eggs, room temperature
  • 1 1/2 cups buttermilk
  • 1 tsp vanilla
  • 2 cups all purpose GF flour (or regular if you are able)
  • 1/2 cup coconut flour
  • 1/4 tsp salt
  • 2 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 cup sugar
  • 1 1/2 cups sweetned flaked coconut
  • 6 Tbs butter, melted or browned

Instructions

Preheat oven to 350 degrees.

Line a 10 1/2 x 5 1/2 loaf pan with parchment, or grease and flour then set aside.

In large mixing bowl sift flours, salt, baking powder and cinnamon.

Stir in sugar and flaked coconut.

In small bowl or large measure cup add buttermilk, beaten eggs and vanilla.

Make a well in flour mixture, pour in wet ingredients and stir just to combine.

Add butter, melted or browned, and stir again just to incorporate.

Pop into preheated oven and bake 50-60 mins, or until nice browned and toothpick inserted into middle comes out clean.

Notes

To make browned butter add to small saucepan and cook over medium heat swirling the pan occasionally to ensure even cooking. As it melts it will turn from a bright yellow color to golden then finally toasty brown. Remove to heat proof bowl to cool leaving any sediment at bottom of pan or strain through cheese cloth to collect sediment.
