Super Bowl Detox Soup

Yes we had fun yesterday at our friends Super Bowl Party.

Yes we ate way too much.
Yes wings, tamale pie, philly cheese steak sandwich, sausage and other pork goodies and of course chips with salsa, and yes beer.
So yes this is why detox soup was on the menu tonight!

Vegetarian (or not) Mexican Potato Corn Chowder


You will need:

2 Tbs olive oil
1 medium onion finely chopped
1 poblano pepper chopped
3 ribs celery chopped
3 garlic cloves
1 tsp cumin
1/2 tsp cayenne pepper
1 tsp oregano
1 tsp mexican chili powder
1 Tbs salt
1 small zucchini diced
2 medium sweet potatoes (not yams)(yams are orange)
1 32oz carton chicken stock
1 32oz carton vegetable stock
1 can muir glen fire roasted tomatoes
1 can diced green chillies
1 15 1/2 can corn
1 can lite coconut milk
2 diced chicken breasts (optional)
(I didn’t use the black beans in picture)
(wasn’t feeling it)
Heat olive oil in large soup pot over medium high heat, add onion, pepper and celery.
Give it 5 mins or so, until soft.
Now add the zucchini, mix it up, give it 2 mins or so then add the potatoes.
Add garlic, stir, enjoy fragrance for 30 seconds or so.
Sprinkle in all spices, stir or warm.
Add tomatoes, stock, chilies, simmer 10 minutes.
(This is where you would add the chicken if you are not doing vegetarian. Give it 5 mins.)
Lastly add coconut milk, don’t boil, just heat through and get ready to serve.
Have bowls of green onion, cilantro and avocado to garnish as you like.
