BBQ Chicken and Garlic Broccoli

My husband and I  usually chat in the morning about  dinner options.

I know, I know most people don’t think of dinner while eating toast.

Its just something we do.

And I usually do most of the shopping.

However, some days I just can’t find the time to get to the store.

And it is usually when I really can’t tell what I did all day either.

Lucky for me my husband likes to grocery shop.

He doesn’t mind picking up a few things on his way home from work.

Love my guy.

But the thing is he always, always, comes home with broccoli.

Sure we like broccoli, but there are so many other choices.

Especially with BBQ chicken.

You know, zucchini, peppers and eggplant all BBQ well.

And go very nicely with chicken.

On this particular day I had asked for broccolini.

Close to broccoli, but different.

I had planned to drizzle it with spicy garlic oil.

So here it is with broccoli, of course you could use broccolini.

Now I would have loved to supply a recipe for homemade BBQ sauce for that chicken.

However I was very short on time (again not sure why).

I really like the Dinosaur BBQ Sauce we can get locally.

That’s what we used.

And good thing too, it was yummy

So if you are short on time too, get out your favorite store bought sauce.

Let’s get grilling…..

Garlic Broccoli

1 head broccoli

3 Tbs olive oil

2 cloves garlic pushed through garlic press

1/4 tsp red pepper flakes

salt & pepper

Steam broccoli until just fork tender

When done place in serving bowl

Empty out pot, return to heat

Add olive oil, heat 30 seconds

Add garlic, pepper flakes

Cook 30 seconds remove from heat

Pour over broccoli

season with salt & pepper

BBQ Chicken

1 whole chicken cut up

1/2 jar of Dinosaur Sensuous Slathering Sauce

Place chicken in large bowl slather in sauce

Let sit 10-15 minutes

Clean and oil BBQ grate

Turn on high

Place chicken on BBQ

At this point my hub says think rotiseriere chicken

turn frequently until you have achieved a crisp dark crust

It does take attention, perhaps 10 minutes

Turn down heat to low and place chicken on top rack

close cover and continue cooking turning occasionally

about 20-30 minutes

 

Left Over Tip
Grill a few extra chicken breasts
Get them out a few days later
Why have chicken 2 days in a row?
Unless you want to of course
Chop it up, add to some tomatoes,
snap peas, scallions and toasted pine nuts
A little olive oil and vinegar dressing
Top it off with a nice piece of goat cheese
garlic bread on the side
