I know, I know I haven’t shared here in awhile…….thing is, I have been spending all my food energy over on Instagram.  It’s just an easier platform to use.  It’s fun and interactive, and I feel I can be more spontaneous and candid there, share more no-recipe-recipes. 

I often shoot with my Iphone instead of lugging out the tripod and fancy camera required for the blog.  Easier to edit and quickly share.  If you look me up there you may notice that I have exported quite a few recipes from here and posted them on Instagram already.  

In the meantime, I hope you make this Cod with Garlicky Bread Crumbs.. it’s an easy, quick, dinner that we enjoy here quite often.  You can use any fish you like, even shrimp would be fabulous.

Cod with Garlicky Breadcrumb Topping

Prep Time: 5 minutes

Cook Time: 15 minutes

Total Time: 20 minutes

Servings: 4 persons

Cod with Garlicky Breadcrumb Topping

Ingredients

  • 1/4 to 1/3 lb of fish per person, I used cod loin
  • 1 cup gluten free bread crumbs
  • 2 cloves finely chopped garlic
  • 1/4 cup good olive oil
  • 1/2 tsp salt
  • fresh parsley, chopped
  • lemons halved

Instructions

Preheat your oven to 425 degrees,

Rinse and pat dry your fish, set aside.

in a small bowl mix together the bread crumbs, salt, garlic and olive oil.

The mixture should resemble "wet sand" add more olive oil if needed.

Lay fish on a parchment paper lined baking sheet, top with bread crumbs.

Bake 12-14 mins, or until internal temperature reaches 145 degrees.

Remove from oven and sprinkle with fresh parsley and a good squeeze of fresh lemon and serve.
