Dark Chocolate Flourless Cake
With Valentine’s Day looming, I want to declare my love of chocolate, preferably dark chocolate. Really, really, good dark chocolate.
My guy, also loves his chocolate, we are two peas in a pod that way. So, my Valentine’s Day gift to him is this decadent flourless dark chocolate cake. Moist, rich, dense and irresistible. A special occasion cake for sure.
Please, don’t tell him how insanely easy it is to whip up. Really, I slaved for hours and hours, it was a labour of love. Truly.
The perfect way to say “I love you”. And, to eat cake too!
Ingredients
- 12 ounces semisweet or bittersweet chocolate, chopped
- 12 tablespoons (1 1/2 sticks) unsalted butter
- 1/4 tsp salt
- 6 large eggs, room temperature
- 1 1/2 cups granulated sugar
- Confectioners sugar for dusting
Instructions
Preheat oven to 325 degrees.
Spray a 9 x 2 inch springform pan with nonstick spray.
Place chocolate, butter and salt in a large microwave bowl.
Melt in microwave on 75 percent power for 2 minutes. Remove and stir.
Continue in 30 seconds increments until chocolate is melted and smooth.
Alternatively, place chocolate, butter and salt in a heatproof bowl.
Bring a saucepan filled with an inch or so of water to a very slow simmer, set the bowl on the pan without touching the water.
Stir occasionally until melted.
Set aside to cool slightly.
Beat the eggs and sugar with standing or hand held mixer at medium speed until light and thickened, about 8-10 minutes.
Fold the chocolate into egg sugar mixture well blended.
Pour into the prepared springform pan and bake until a toothpick inserted into the center comes out wet but not gooey. About 1 hour and 25 minutes.
Remove cake from the oven and cool on a rack.
Dust with confectioners sugar and serve.
