Warm Potato Salad with Garlic and Parsley

Internet shopping was invented with my Hubby in mind.

He doesn’t like to shop, he wants to get in and get out in as little time as humanly possible.

Often with an item that wasn’t really what he wanted, it was just “close enough”.

The Internet has changed all that for him. What would have taken endless hours in a department store, is now just a few keystrokes and minutes of browsing.

Last week we attended  a BBQ at a friends house, they served these incredible elk sausages.

Well not only did they serve them, our host actually shot the elk and had the sausages made, well not just for us, but we felt special all the same.

So my hubby wanted some, he is not the hunter kind of guy. So the next best thing to do is fire up the computer and go shopping.

For a guy who only shops when absolutely necessary he did OK.  Not only did he get the elk sausage but also some Bison burgers and Buffalo as well.

Now what would be best served along side this manly fare? Potatoes of course!  Manly food is meat and potatoes naturally.

Since it was still a little chilly here, a warm salad just seemed more fitting for the day.

However, if it’s summer already where you live, this salad is just as tasty served room temperature or cold.

Warm Potato Salad with Garlic and Parsley
2 lbs new potatoes (or red, or yukon gold)
4 Tbs butter
2 Tbs olive oil
3 cloves garlic passed through garlic press
1/4 cup finely chopped parsley
Salt and pepper to taste
Wash and chop potatoes to bite size pieces
Add to large stockpot covered with cold water
Bring to boil, add generous amounts of salt (I added 1/2 palm full)
Simmer 8-12 minutes until just fork tender
Meanwhile, add butter, garlic and parsley to bottom of large serving bowl
Pour drained potatoes to bowl, drizzle with olive oil
Toss to coat and season with salt and pepper
