Pan Fried Calamari

We love to eat in fancy restaurants.

White tablecloths, tons of glassware on the table,

heavy wine lists, lots of dark wood kind of places.

The kids too, could be hereditary?

Often we eat a dish so successful that we want to make it at home.

It looks and sounds challenging but really it’s not.

Get some good quality squid.

Cut into bite size pieces, drag through some flour,

Get your pan really hot, catch on fire hot, add your oil.

Wait until you think that will catch on fire.

Then drop them in, don’t crowd them, and stand back its hot!

This particular restaurant paired them with cute little hot peppers.

I couldn’t find exactly the same, so I used those hot peppers that you

find in the spicy olives at our local grocery.

 

 

 

Pan Fried Calamari

1/2 cup vegetable oil
4 tubes squid,cleaned and sliced, handful of tentacles
1/4 cup all purpose flour (I used 1/2 cup GF flour and 1 Tbs cornstarch)
1/2 teaspoon salt, 1/2 tsp pepper
1/4 cup pickled hot peppers or pepperoncini
1 lemon halved

Heat oil in large cast iron pan
Drag squid through flour and salt and pepper
Add to pan, careful not to crowd
cook 2 minutes per side
Place on paper towels to drain
Add hot peppers to pan, heat 1-2 minutes
Sprinkle over squid to serve
Drizzle with lemon
