Last weekend we spent at our cottage at Lake Ontario, its the time of year when we have to be thinking of clearing out the freezer and pantry.

It becomes a carry in carry out weekend, with the  added the task of using up all the foodstuffs in the pantry and fridge collected over the summer.

All summer long each weekend  I plan the menu, buy the groceries, pack them on ice and lug them up there. Every time we go.  Not this time.

We just stopped at the farmers market and picked up a ton of fresh vegetables.

Fabulous red tomatoes, mammoth zucchini, herbs, and of course corn.

Our friends that were joining us had the same idea, yep more zucchini, but added to the bounty apricots and baby plums. Perfect.

Checking the fridge I had feta (lasts forever, so always seems to be in my fridge), there was a red onion and lemon in the crisper.

In the garden some oregano, threatening to take over the whole  herb bed!  Put that altogether and you have a wonderful dish.

So if you also stopped by the market and picked up a huge zucchini here’s a light fresh way of using them up.

Perfect on its own with a nice crusty bun, or paired with grilled chicken or pork (or whatever is in your freezer you need to use up).

Clean and cut off ends of the zucchini, using potato peeler trim some of the outer green skin.
Peel long strips from zucchini dropping them into large serving bowl. When you encounter the seeds stop, rotate and continue
until all the outer light part of the veg is used up.

Add to that 1 container of crumbled feta, 1/4 cup of fresh chopped oregano, and half a red onion finely chopped.
in a small bowl combine 4 Tbs olive oil, zest of 1 lemon and salt and pepper to taste.
Toss to combine and serve.

Pamela – the zucchini and goat cheese was a nice surprise of flavors. It would never occur to me to combine like that. I did not have an onion so I used an orange pepper to add sweetness, crispness and color – worked out great. Many thanks
