Gluten Free Dinner Rolls! Soft, pillowy, tender, buttery…
Easily made dairy-free and vegan.
Add some herbs for a savory version, or enjoy with a smear of butter warm from the oven.

Ingredients
- 1 1/4 cups milk, dairy free works as well
- 2 Tbsp butter, or vegan butter room temperature
- 1 packet yeast
- 1 1/2 Tbsp sugar
- 1 cup tapioca flour
- 3/4 cup brown or white rice flour
- 3/4 cup potato starch
- 2 tsp baking powder
- 2 tsp xanthan gum
- 2 tsp salt
- 1 Tbsp olive oil
- 2 large eggs
- Add on: fresh chopped thyme, rosemary, or sage
Instructions
Combine milk with butter and microwave for 70 seconds.
In a large mixing bowl combine yeast and sugar.
Whisk in your heated milk mixture.
Set aside while it proofs, about 10 mins.
In a small bowl mix rice flour, potato starch, tapioca, xanthan gum, salt, and baking powder.
Once yeast is proofed, with hand held or stand mixer on low, add eggs and olive oil.
Slowly add flour mixture and beat until well combined.
Grease muffin tin generously.
Spoon or use a small ice cream scoop to fill each cup 3/4 full.
Cover with foil and rest in refrigerate for 8 hours, or up to 24 hrs.
Remove tin from fridge and let rest on counter uncovered while your oven heats to
350 degrees.
Bake for 25-30 mins, or until tops are nicely browned.
Remove from oven, after a few mins flip over onto sides while resting in tin so the bottoms don't get soggy.
Then place on wire rack to cool completely.
