Grilled Whole Fish

If the thought of preparing and serving whole grilled fish is something you never considered, I get it. Looks a bit daunting perhaps? However, it’s about the easiest dinner party entree I have ever cooked.
Just stuff each fish with some lemon slices, fresh herbs and shallots, give them a good sprinkle of olive oil and kosher salt. Then grill on moderately high heat. Although you are cooking a whole fish, each side is fairly thin, it only takes 4-6 minutes to cook each side, leaving lots of time to enjoy your guests.
Served with a warm potato salad and big green salad, it was a huge success.

Ingredients
- 3/4 lb to 1 lb whole fish per person, like branzino or red snapper, cleaned and scaled
- 3-4 fresh lemon slices per fish
- sprigs of fresh parsley
- sliced shallots
- kosher salt and pepper
- Olive oil
Instructions
Bring fish to room temperature, allow about 30 minutes
Pat dry then season inside and out with kosher salt and pepper
Drizzle inside and out generously with olive oil
Stuff each cavity with lemon slices, parsley and shallots
Oil grates on bbq well with oil, heat to moderately to high heat
Lay fish on grate with open cavity facing in
Cook 4-6 mins, flip by rolling cut side towards you rather than lifting up
Cook second side 4-6 minutes as well
Remove to platter and serve
