I have confessed in the past, to not really craving baked goods.

That’s true.

However, bread is in a whole different category.

I adore bread.

That was the hardest hurdle when I was diagnosed with Celiac’s Disease.

There are a lot of good gluten free breads out there.

There are also a lot of really bad gluten free breads out there.

I think I have tried them all.

And I am always on the lookout for good gluten free bread recipes.

Usually, there are tons of different flours.

All kinds of strange sounding starches.

And exact measurements.

I don’ t do well with that.

I seem to deviate from recipes.

That’s why these biscuits are perfect for me.

With just a few things from the pantry and fridge and you can create these fabulous biscuits.

You just pop it all into your blender, make a nice thick gooey batter.

Pour and bake.

Easy huh?

How divine would it be to serve these hot from the oven, at my next dinner party?

I could have the batter all ready in the baking tins.

Pop them into the oven, just as guests arrive.

Imagine the smell of fresh bread baking while sipping cocktails.

When the timer chimes, sitting down to a lovely table.

Enjoying a warming bowl of soup with those biscuits.

Then perhaps a nice roasted chicken, and a cool crisp salad.

Lots of engaging conversation.

Finishing up with some dark chocolate and fresh berries.

Just thinking out loud……

I think I need to plan on having dinner guests soon.

And you can bet that warm cheesy biscuits will be on the menu.

Cheesy Gluten Free Biscuits

Cheesy Gluten Free Biscuits

Ingredients

  • 1 1/4 cups tapioca starch/flour
  • 1/2 cup milk
  • 4 Tbs butter, melted
  • 3/4 cup shredded cheese, I used queso fresco, mozzarella would work as well
  • 1 egg
  • 1 tsp agave nectar
  • 1 tsp baking powder
  • 1/2 tsp salt

Instructions

Preheat oven to 400 degrees.

Generously grease muffin tins.

Add all ingredients to blender and blend until you have a thick smooth batter.

Fill tins 1/2 full.

Bake for 15-20 mins.

YUM!! I made these biscuits last night and they were delicious and so easy. I can’t seem to find a gluten free bread that I love (in Canada anyway). I made a double batch so I could freeze them. Thanks Pamela. I love all your recipes!
