Corn Feta Salad

We are always on the lookout for recipes that work for everyone here.
Exchanging ideas with friends, interested in what they cooked last night.
In fact my friend Len mentioned this corn salad last summer.
I have been eager to try it since then.
It sounded so yummy.
However certain criteria have to be taken into consideration.
For me it has to be gluten free, easy right?
Our daughter is vegetarian, and may at times eat seafood. Still easy, sort of.
Now add my husband and son who eat everything, especially if it is meat.
So rather than dwell on what we can’t eat, we explore what we can.
This recipe for corn salad has all the criteria we look for.
Works for everyone.
If we are lucky it is a fish eating day for our daughter.
So whip up the salad, grill some fish, shrimp or steak (the boys eat fish, thank goodness).
Dinner done.
That was easy.

Corn Feta Salad
4 ears fresh corn, shucked
Olive oil
1/2 cup crumbled feta
Cayenne pepper
Juice of 1 lime
1/8 cup red onion, finely diced
3 Tablespoons cilantro, finely chopped
salt & pepper

Drizzle corn with olive oil
Sprinkle with cayenne, be generous
BBQ on med high heat until slightly charred
Remove from heat, let cool
Cut kernels from cob
Add to feta, lime, onion and cilantro
season with salt & pepper
