Happy St. Patrick’s Day!

Today a nice warm crusty Soda Bread.

Because Bunny begged me to make one.

We are part Irish after all.

And I love to bake when I know that everyone here will happily devour it.

Warm from the oven, with a generous pat of butter melted on top.

You can easily have this loaf in the oven in less than 1/2 hour.

I made mine on the sweet side, with a few raisins, currants and a bit of lemon rind.

That’s the beauty of this little loaf.

Sweet or Savory, your choice.

If you prefer your Soda Bread on the savory side, omit the sugar and raisins.

Instead add a little more salt and spices such as caraway, dill or fennel.

Both versions like the addition of some lemon or orange too.

Make sure to cut a deep X on the top before popping it into the oven.

Old Irish lore says that it will ward off the Devil and protect your household.

Gluten free Irish Soda Bread

Gluten free Irish Soda Bread

Ingredients

  • 1 cup raisins
  • 2 cups gluten free flour
  • 2 Tbs sugar
  • 1 tsp baking soda
  • 1 tsp zanthan gum
  • 3/4 tsp salt
  • 3/4 tsp cream of tartar
  • 5 Tbs unsalted butter, divided 3 Tbs cold 2 Tbs melted
  • 1 egg
  • 1/2 cup buttermilk
  • zest of 1/2 lemon

Instructions

Preheat oven to 375 degrees.

Line a baking sheet with parchment paper.

In a small saucepan add 2 cups of water, bring to boil add raisins and simmer 3-4 mins.

Drain and set aside to cool.

In large mixing bowl add flour, salt, baking soda, cream of tartar and sugar.

Mix well.

Add the 3 Tbs of cold butter and cut in with pastry knife or two knives until it resembles a fine meal.

Create a well in center of bowl, add egg, buttermilk, raisins and lemon.

Mix together until just incorporated.

Pour out onto baking sheet and form into a round loaf with your hands.

Cut a X on the top of the load approx. 1" deep.

Slide into the oven and bake 45 - 50 mins.

Remove and brush with reserved 2 tbs of butter melted.

Lovely recipe!

I wish accurate gluten free labelling was over there where you are, as I think it would bring more awareness. I had a really terrible gluten free university experience in Australia (a country where GF labelling laws are very strict) at a top university and things like barley stews and pasta meals with wheat pasta were mislabelled as Gluten Free very frequently.

The kitchen where I stayed at on campus were very careless about cross contamination as well. More details are available in my articles. including a response from the head of residence. Hope you find it interesting.
