I thought with all the soups coming your way (from me) that warm, crusty, yummy cornbread was a must.

Yes that is 1/2 a loaf in the picture, we devoured the other half warm from the oven slathered with butter!!

My Favorite Cornbread

Ingredients

  • 1 cup all purpose flour, I used Bob's Red Mill GF baking flour
  • 1 cup yellow cornmeal, again Bob's GF
  • 2 Tb sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 egg beaten
  • 1 cup sour cream
  • 1/2 cup buttermilk
  • 2 Tb olive oil

Instructions

  • Set your oven at 400 degrees
  • Whisk all dry ingrediants together (flour, cornmeal, sugar, baking powder and salt)
  • In another bowl mix wet ingrediants (egg, sour cream, buttermilk and oil)
  • Add wet to dry, mixing just until blended
  • Pour into greased loaf pan
  • Bake for 22-25 minutes
